The Hostellerie Jérome in La Turbie is a balcony on the Mediterranean. Provence, Italy and the Ligurian Sea provide Bruno Cirino with enough material for an inspired cuisine, made up of sun, sea and southern flavours. Capon, squid, mullet, scampi, pigeon and Sisteron lamb are enhanced with the skilful use of spices and regional plants from Giono, wild fennel, green almonds, verbena and citronella. The gamberoni d’Oneglia, the “Bellini” juice with grilled mint and the cassata with buffalo milk, maraschino cherries candied in mountain angelica, proved a huge success among gourmets.
