Truffle discovery days

One of the Jaumard brothers’ most sought-after offerings is their truffle discovery days, available during the winter months from November to March. Guests join Alexis and Franck for an hour-long walk through their truffle fields, accompanied by their expertly trained dogs, Mirette and Polka. Together, they unearth some of the mysteries of the black truffle, also known as the “black diamond.”

After the hunt, participants are invited to the farmhouse, where a warm fire and a glass of wine set the scene for a delicious truffle tasting. Sample dishes such as cheese stuffed with black truffles, creamy scrambled eggs infused with truffle, and even truffle crème brûlée. These experiences highlight the versatility of truffles and the Jaumard family’s culinary expertise.

While the main season is in winter, the Jaumard brothers also offer discovery days in May-June and September-October, depending on the truffle growing cycle. For groups of 10 to 30 people, they organise tastings at the estate or even private events, ensuring an intimate and educational experience.

The Jaumard estate is a destination for purchasing some of Provence’s finest truffles. Visitors can buy fresh truffles directly from the estate, including winter truffles (Tuber melanosporum) from December to March, summer truffles (Tuber aestivum) from May to August, and Bourgogne truffles (Tuber uncinatum) from September to November. Each truffle is carefully brushed, sorted, and refrigerated to maintain its exceptional quality.   • Beat three eggs per person with salt and pepper.
  • Slice the truffles thinly (do not grate them).
  • Add a teaspoon of Armagnac and 200 mL of whipping cream. Beat together, cover, and let rest.
  • Cook slowly in a double boiler, stirring gently with a wooden spoon until a thick, smooth cream forms.
